Meat Free May

Diet is something which we all struggle with at some time or other. For as far back as I can remember I have had issues with meat. When people make statements such as “oh I can’t wait for a big, juicy steak tonight’ its never been a something I could understand never mind relate to (although, craving a big slice of cake is definitely relatable #piglife), so after years of battling and trying to force feed myself meat I decided enough was enough. It had gotten to silly, too much food was being wasted and nutrition was most definitely lacking.

Having said that, even as a pescatarian the aforementioned problems have not been solved. Meat has been stripped from meals but not always replaced with an adequate substitute.

Stumbling across a “Meat Free May” article got the creative juices flowing and presented the perfect opportunity/excuse to get adventurous. Sure, I’m a little late to the party but as they say – it’s better late than never, so over the next few weeks there will be much more effort going into meal preparations which hopefully will result in some tasty, macro friendly meat free meals!
